Whipped Feta

I knew when I moved south to a house nestled in the woods in the middle of a tiny town that it would be a big change. In so many ways I’ve gained so much, patience, peace, privacy, life at a slower pace, and lots of little animal friends. However, we do miss variety! Especially when it comes to our favorite restaurants back home in the Washington DC metropolitan area. As a matter of fact, the lack of yummy food options here was the motivating factor behind learning to cook things I never thought I could. Recently our area has been booming and more and more food options are popping up, one of which is a little Greek place that serves a whipped feta with honey that I absolutely fell in love with! I could never get to the bottom of the flavors! I grew up eating feta but this is like nothing I’ve ever had before. I was determined to try to recreate it. Luckily the manger of the place was a very chatty kind of guy and through our conversations I was able to confirm a couple of the mystery ingredients. Between these chat sessions and the wonderful world of google, I was able to recreate this scrumptious dish. This is perfect served with warm pita, chips, or pretzels. Here’s how to make it:
Ingredients:
8 ounces each of:
Feta
Cream cheese
Mayo
1/2 teaspoon thyme
1/2 teaspoon oregano
1/2 teaspoon dill
1/4 teaspoon pepper
1 small clove of garlic
Zest of two lemons
1 tablespoon fresh lemon juice
Pinch of salt
Honey for drizzling ( measure with your heart)
Directions:
Put all ingredients except honey in a food processor or blender and process well. Pour into a serving dish and drizzle with honey.

This is truly the best thing I have ever eaten.
