These Pumpkin Spice Waffles are everything you love about autumn, soft, golden, and perfectly spiced with notes of cinnamon, nutmeg, and a touch of maple. They come together easily in one bowl, making them perfect for cozy weekends, holiday brunches, or anytime you need a little seasonal comfort on your plate. Top them with whipped cream, a drizzle of maple syrup, or even a handful of toasted pecans for the ultimate fall breakfast.
Ingredients
2 large eggs
¾ cup milk
¼ cup melted butter
½ cup pumpkin puree
2 tablespoons sugar
2 tablespoons vanilla extract
½ teaspoon maple extract (optional but recommended)
1 cup all-purpose flour
1 tablespoon baking powder
¼ teaspoon salt
2 teaspoons pumpkin pie spice mix (or use 1½ teaspoons cinnamon and ½ teaspoon nutmeg)
Directions
In a large mixing bowl, whisk together the eggs, milk, melted butter, pumpkin puree, sugar, vanilla extract, and maple extract (if using) until smooth.
Add the flour, baking powder, salt, and pumpkin pie spice directly into the same bowl. Whisk until the batter is fully combined and no streaks of flour remain.
Preheat your waffle iron according to the manufacturer’s instructions.
Lightly grease the waffle iron if needed, then pour in the batter and cook until the waffles are golden brown and crisp.
Serve warm with butter, maple syrup, or a sprinkle of powdered sugar.
