The Very Best Broccoli Cheese Soup

If it were up to my family I would make this creamy broccoli soup every week! It is cheesy and delicious and comes together all in one pot. Of course you can use your favorite cheeses in place of the options I offer. Now that its Fall soup weather will soon be upon us, and nothing warms up your bones like a warm bowl of soup!   • Ingredients:

  • 3 Heaping cups of broccoli chopped very small

  • I Heaping cup of onions, diced

  • 2 Cloves garlic, minced

  • 1 Large carrot, shredded

  • 8 Tablespoons butter

  • 1/2 cup all purpose four

  • 1 Teaspoon garlic powder

  • 1/2 Teaspoon onion powder

  • 1/2 Teaspoon paprika

  • 1/2 Teaspoon ground mustard

  • 2 Cups broth ( I use chicken broth)

  • 3 Cups whole milk

  • 1/3 Cup freshly grated parmesan

  • 4 Ounces cream cheese

  • 3 Cups freshly shredded cheddar cheese

  • 1/2 Cup Heavy Cream

  • Salt and pepper to taste


Directions:

  1. In a large pot over medium heat melt 8 tablespoons of butter

  2. Add in onions

  3. Sauté 4 minutes until softened

  4. Add in carrots and garlic

  5. Sauté for 1 minute

  6. Add flour and stir continuously for additional minute

  7. Add seasonings ( garlic powder through ground mustard)

  8. Add broth and mix well

  9. Add Milk, broccoli, and salt and pepper to taste

  10. Stirring regularly, bring mixture to a boil over medium heat

  11. Once it begins to thicken drop the temperature to low and allow to simmer 10 minutes or until broccoli has softened , continue to stir frequently

  12. Once the broccoli is fully cooked add all of the cheese and cream

  13. Allow to simmer on low until cheese is fully incorporated, just a couple more minutes, continue to stir regularly
