Stuffed Tortillas




If you need a quick and easy meal that is also super delicious, look no further! These stuffed tortillas can be made with the pre-cooked fillings of your choice and they are a crowd pleaser! Stuff these with your favorite cooked meats, cheeses, pizza toppings, sandwich ingredients, or cooked pre-cooked veggies! There are so many ways you can put these together and they are ready in about 20 minutes from start to finish! I love using this recipe to turn leftovers into a brand new meal! Give it a try!


Ingredients:

  • 3 Cups all purpose flour

  • 2 Teaspoons baking powder

  • 1 Teaspoon salt

  • 3 Tablespoons oil

  • 1 Cup HOT water

  • Pre-cooked fillings of your choice that have been cooled


Directions:

  1. In a large bowl, combine your dry ingredients. Mix well.

  2. Add in oil and hot water

  3. Mix together with a wooden spoon at first but then use your hands to incorporate all the ingredients until you form a dough ball.

  4. Knead the dough ball a couple times until its relatively smooth, but it doesn't need to be perfect.

  5. Divide the dough into 8 balls. The best way to do this evenly without using a scale is to divide the dough into two balls, then divide those two into two, and so on.

  6. Put the balls back into the bowl and cover with a damp kitchen towel or even a damp paper towel.

  7. Let the dough rest for 15 minutes.

  8. While the dough is resting, prepare your filling ingredients. You can use anything you'd like but you want it to be cool or at least room temperature before you add it to your dough. It just can't be hot.

  9. After 15 minutes roll out a dough ball on a lightly floured surface, just until you have enough of a surface to add your filling. Between 1/4 to 1/2 cup of filling.

  10. Enclose the filling in the dough creating a filled dough ball and mash the dough seams together to seal the filling in.

  11. Turn your dough ball over so that it is seam down. Lightly roll it out with a rolling pin. You will start to see the filling pushing into the dough as you flatten it out, but you don't want it to break open.

  12. Roll it out until it is flat and circular. See photos below

  13. Preheat a pan over medium heat

  14. You can oil/butter your pan but you don't have to. Just like when making/heating regular tortillas you don't need to have any oil in the pan. It just depends on your preference.

  15. Cook the tortillas 1-2 minutes on each side until golden and toasty on the outside.

  16. Enjoy!
