Strawberry Vinaigrette

I LOVE summer! Even here in the Deep South where the heat and humidity have everyone begging for grey December skies. Not this girl! Give me sunshine, water to float in, and all the beautiful garden fresh fruits and veggies that are in abundance this time of year! Something about the summer heat makes us crave all things fresh, like the salad pictured. It was a mix a fresh and grilled fruits and veggies, but strawberries made a special guest appearance. Strawberries are less of a berry for me and more of a tomato. They are overlooked in the salad world in my opinion especially when it comes to turning them into an amazing vinaigrette! This sweet and tangy dressing is an absolute favorite around here! Follow the steps below to give it a try!
Ingredients:
2 Cups sliced strawberries
2 Tablespoons balsamic Vinegar
2 Tablespoons honey
6 Tablespoons extra virgin olive oil
Salt and pepper to taste ( I did a pinch of each)
Directions:
In a bowl combine your strawberries and balsamic vinegar
Let them sit and marinate together for 30 minutes
After 30 minutes, combine all your ingredients in a blender
Blend well
Serve!
