Split Pea Soup ( Leftover Hambone)

This soup is creamy, hearty and delicious! It is especially a great way to use that leftover hambone and ham after holiday dinners. Not a fan of ham? Sausage or chicken will also work great. Don't eat meat? That's okay too! Omit the meat, use vegetable broth and amp up the seasonings to enjoy an all veggie version. Never be afraid to customize recipes to suit your preferences.
Ingredients:
Leftover Hambone
6 Cups chicken broth or broth of your choice
2 Cups ofwater
2 Cups dried split peas, washed ( I soak mine overnight but you don't technically have to)
1- 2 Cups of diced leftover ham ( more if you like it meaty)
I Onion, diced
3-4 Stalks of celery, chopped
5-6 Cloves of garlic minced
3-4 Large carrots cut into small pieces
1 Tablespoon dried parsley or a handful of fresh chopped
1 Teaspoon dried thyme
1 Onion powder
1 Teaspoon garlic powder
2 Bay leaves
Salt and Pepper to taste
1 cup of cream ( optional)
1 lemon ( optional)
Butter/Olive oil for sauteeing
Directions:
Heat a couple tablespoons of olive oil and a tablespoon of butter in a large pot over a medium temperature
Add chopped ham (not the bone), onions, celery, carrots, and garlic
Sauté for 4-5 minutes until veggies have softened
Add split peas and hambone
Add broth and water
Add seasonings including bay leaves ( being careful not to over salt. Ham is salty so I typically wait until the end to add additional salt in order to gauge how much it needs if any
Over a medium high heat, bring mixture to a boil.
Cover, reduce heat to a medium low
Allow to simmer for 1 1/2-2 hours, stirring a couple of times throughout
Remove hambone and allow to cool enough to get any remaining meat off
Add meat back into your soup
Add cream and juice of one lemon if using
