Savory Muffins


We have all heard of muffins full of sweet flavors like vanilla, chocolate chips, or our favorite fruits. They are a great grab and go snack or treat. Blueberry muffins are a personal favorite of mine, but these savory muffins are putting up a pretty good fight for first place. Not only are they delicious, but they are full of more hearty ingredients to help start the day. More protein, less sugar, and all in the palm of your hand. You can whip them up in less than 30 minutes so they are perfect for the busy weekday hustle and bustle. Not a meat eater? Substitute the meat with you favorite precooked veggies or add veggies to make them even more delicious and nutritious. MAKES 12 MUFFINS


Ingredients:

1 Cup milk

1/4 Cup sour cream

8 Tablespoons butter, melted

2 Eggs

2 Cups freshly shredded cheese ( use your favorite but I typically use cheddar)

2 Cups of Pre-cooked meat shredded or crumbled ( chicken, sausage, ham, are some options)

1 Teaspoon salt

Dash of pepper

Seasonings to taste ( I uses 1 teaspoon garlic powder, 1 teaspoon onion powder, dashes of dried parsley,) other options depending on the meat you are pairing it with, are basil, Italian seasoning, dill, cajun seasoning.

2 cups all purpose flour

1 1/2 Teaspoons baking powder

1/2 Teaspoon baking soda


Directions:

  1. Preheat oven to 350 degrees

  2. In a large bowl combine milk, sour cream, and eggs. Mix well.

  3. Add butter, cheese and seasoning. Mix until combined.

  4. Stir in meat

  5. Add dry ingredients and stir just until batter comes together. Don't over mix.

  6. Divide batter into prepared muffin pan. I use silicone pans which I lightly butter.

  7. Top with cheese if desired. I use parmesan on top. I also love topping these with everything bagel seasoning.

  8. Bake for 20- 25 minutes. It takes 20 minutes in my oven, but everyone's oven is different. Check it at 20. Don't over bake.

  9. Let muffins cool for 10 minutes in the pan before serving.
