Quinoa Salad


This quinoa salad is the perfect fresh, healthy and delicious side for almost any main dish. It especially pairs well with anything just off the grill. Don't be afraid to add your favorite chopped veggies, beans, feta crumbles or play around with your chosen combination of ingredients to make it your own.



Ingredients:

2 Cups cooked, cooled, quinoa

1 Red or sweet onion finely diced, or several spring onions, chopped

Handful of fresh parsley, minced

1/2 Cup olive oil

Juice of two lemons

Two large tomatoes, diced ( you can also use halved cherry tomatoes if you prefer)

1 Avocado, chopped

Two cloves of garlic, minced

1 Tablespoon dried dill or equivalent of fresh dill

Salt and Pepper to taste

Optional add-in possibilities: Can of drained garbanzo beans, corn, chopped cucumber, additional fresh herbs, feta crumbles.


Directions:

  • Combine lemon juice, olive oil, chopped herbs, veggies and seasonings.

  • Toss together well.

  • Add in quinoa and toss gently to coat.

  • Taste to adjust salt and pepper asa needed.

  • Refrigerate until ready to use. Best same day.
