Quinoa Quiche Muffins


Life is busy and healthy food on the go can be hard. I have found with just a little planning ahead you can make it happen. A family favorite grab and go meal is this quinoa quiche recipe. I love preparing these when we are all going to be running in different directions because I know my family is getting a nutritious meal packed full of protein, veggies and all the goodness they need. You can make the quiche muffins ahead of a busy week, store them in the fridge and pop them in the microwave for 30-60 seconds to reheat. Not only are they good for you, but they taste delicious too. Even your picky eaters will enjoy these.



Ingredients:

1 Cup of the meat of your choice ( or sub extra veggies). I often use chopped ham or leftover meat from a previous meal. This recipe is a great way to use leftovers.

1 Onion, chopped

2 Cloves garlic, minced

1-2 Cups of chopped/shredded veggies (zucchini, squash, carrots, spinach, peppers, broccoli)

2 Cups cooked quinoa

1 Cup freshly shredded cheese ( I use cheddar, but use your favorite)

1/4 Cup freshly grated parmesan

4 Whole eggs

4 Egg whites

Seasonings (I use salt, pepper, garlic powder, but use what you like. Make it cajun with some cajun seasoning, or add in fresh herbs like basil or parsley)



Directions:

  1. Add a couple drizzles of oil to a frying pan set over medium heat.

  2. If using uncooked meat, season it well with desired seasonings ( at least salt and pepper) and sauté it until cooked through. Then add in garlic, onions, and all veggies.

  3. If meat is precooked add it to the pan along with onions, garlic and veggies.

  4. Add in seasonings

  5. Sauté until veggies have softened.

  6. In a large bowl add veggies, quinoa and cheeses

  7. In a separate bowl beat eggs and egg whites.

  8. Add egg mixture to veggie mixture.

  9. Add any fresh chopped herbs, if using

  10. Mix well to combine

  11. Scoop into prepared muffin pans. I use silicone muffin pans that I butter. I love silicone because nothing sticks. I haven't tried making these in paper liners/baking cups but I believe it would work.

  12. Bake at 350 degrees for 20-30 minutes. Baking time will vary depending on your oven and of course the size muffin pan that you are using. The recipe will make 18 standard size muffins.
