Quark: Creamy Spreadable Cheese

With only two ingredients and very little effort you can make this homemade cheese!

It's creamy, mild, and a cross between a thick greek yogurt and a good quality cream cheese. Once you whip up the base, you can eat it as is, or flavor it with your favorite herbs. I love to do a scallion herb flavor. This spread is also delicious with honey or jam. Give it a try, you won't believe how easy it is to make!


Ingredients:

1/2 gallon Full Fat Buttermilk

1 Cup of heavy whipping cream


Directions:

Combine buttermilk and cream into a 2 quart oven safe cookware and whisk well. Put it in the oven at 200 degrees for 2 hours and 20 minutes.Thats it! Remove it from the oven. place a strainer over a large bowl and line the strainer with a clean kitchen towel or cheese cloth. Pour cheese mixture into the cheese cloth and let it strain on the counter for 2-6 hours. I prefer 6 hours for maximum thickness. Once it is strained mix the cheese in a mixer or with a hand mixer for about a minute until nice and smooth. Store in the refrigerator.
