Pumpkin Yeast Rolls

I’m going to share with you my family’s favorite dinner roll recipe! They are easy to make, super moist and delicious! Their orange color is the perfect addition to the Thanksgiving table, but these are great anytime! Don’t let the pumpkin throw you off. It’s not like pumpkin bread or cookies, these aren’t pumpkin spice or anything like that. The pumpkin simply makes these little guys so MOIST and adds nutrition and fiber in addition to adding that beautiful, natural orange color! Ingredients:
1 cup warm milk
1/2 cup warm water
1/2 cup sugar
1 Tablespoon yeast
1 cup pumpkin puree (100% pumpkin puree not pumpkin pie)
1 stick butter softened
2 teaspoons salt
6cups flour
melted butter for brushing on after baking
Directions:
In your mixer add :
1 cup of warm milk
1/2 cup of warm water
1/2 sugar
1 tablespoon yeast
Let sit 5 minutes until the yeast wakes up
Add :
1 heaping cup pumpkin
1 stick of softened butter
2 teaspoons salt
Mix well
Add 1 cup of flour at a time up to 3 cups and mix well
Switch to dough hook if using a kitchen aid mixer
Add 3 more cups of flour, one cup at a time. Knead 5-7 minutes . Cover and Let rise 1 hour or until doubled in size.
Punch down dough and separate into equal pieces and place on a lined sheet pan. Amount will depend on the size you make. Recipe will make almost 30 average sized dinner rolls, but feel free to make them as large or small as you’d like . Cover and let rise 30 -60 minutes . Bake at 400 degrees for 12-15 minutes . Brush with melted butter and enjoy!
