Peach Cobbler

April 13th is National Peach Cobbler Day so I had to share with you the simplest, but most delicious peach cobbler ever! Start to finish this cobbler comes together in less that 45 minutes and its so good you will have no words! Break out the vanilla ice cream or homemade whipped cream to put it completely over the top! If fresh peaches aren't available no worries, frozen will do just fine. Oh and guess what? This recipe can easily be used with any fruit, so keep it handy and cobbler away!

Ingredients:
4 cups fresh or frozen (thawed) peaches
2 cups sugar, divided
1tablespoon lemon juice
1 teaspoon vanilla
1/2 cup butter

1 cup flour
1 tablespoon baking powder
Pinch of salt
1 cup milk
Cinnamon
Nutmeg (optional)
Directions:
Preheat your oven to 375 degrees
In a saucepan over medium/medium-high heat bring peaches, 1 cup of sugar and lemon juice to a boil, stirring to combine.
Simmer 5-7 minutes until sugar sis dissolved and peaches have softened a bit
Remove from heat and add vanilla
Add butter to casserole dish or cast iron skillet and melt in oven
While butter is melting whisk together flour, remaining 1 cup of sugar, baking powder and salt
Add milk to dry ingredients and whisk just until combine
Pour batter over melted butter in skillet, do not mix
Pour peach mixture over batter, again do not mix
Sprinkle with cinnamon and nutmeg
Bake at 375 for 35 minutes or golden and bubbly
