One Pot Chicken Pasta In Red Sauce

This is an easy but oh so delicious pasta. The secret to all the flavor is the noodles cooking straight in the sauce.


Ingredients:

  • Three boneless, skinless chicken breasts (or equivalent amount of thighs) chopped into bite size pieces

  • Galic Powder

  • Onion Powder

  • Salt

  • Pepper

  • Dried Oregano or Italian Seasoning

  • Dried Parsley

  • Olive Oil

  • 1 large onion, chopped

  • 6-8 clones galic, minced

  • 4 Ounces tomato paste

  • 15 Ounces tomato sauce

  • 4 Cups Chicken broth

  • 16 Ounces of thin or small pasta ( I use regular or thin spaghetti usually)

  • 1 Cup cream

  • 1 Cup freshly grated parmesan plus extra for topping pasta ( not the stuff in the green can)

  • Water or extra broth as needed


Directions:


  1. Coat the bottom of a large pot with olive oil, just enough to cover the bottom of the pan and heat over medium-medium high heat

  2. Season your chicken well with garlic powder and onion powder, about two teaspoons of each. Salt and pepper them to taste.

  3. Once oil is heated add chicken to pan, spreading out in an even layer and then do not stir for two minutes.

  4. After two minutes, continue to sauté your chicken until there is no more pink, stirring to cook all sides

  5. Add in onions, garlic, 1 tablespoon of dried parsley or a handful of chopped fresh parsley, 1 tablespoon dried oregano or Italian seasoning, 1 teaspoon garlic powder, 1 teaspoon onion powder and a pinch of salt and pepper.

  6. Sauté a couple minutes until onions soften, stirring occasionally

  7. Add in tomato paste and sauce

  8. Stir well and cook for 1 minute

  9. Add in broth, mix well to incorporate

  10. Bring mixture to a simmer,cover, reduce heat to a medium-low

  11. Simmer for 30 minutes, stirring occasionally

  12. Add in pasta and cream

  13. Stir often to keep pasta moving around and softening

  14. Cook until noodles are cooked through 10-15 minutes depending on the noodle size

  15. Add additional broth water a little at a time as needed while the noodles absorb the liquid they are cooking in. You shouldn't need much if any at all.

  16. Once noodles are fully cooked, add in parmesan. Mix it together well and its ready to serve
