Old Fashioned Biscuit Bread Pudding

If you find yourself with leftover biscuits repurpose them into this DELICIOUS bread pudding. I added blueberries to mine, but you can add whatever fruit you would like, or none at all. Make the flavor your own, just make this bread pudding! This recipe is terrific if you need to feed a crowd, and the portion in the recipe will fill a standard size rectangular casserole dish. However, feel free to cut it in half and use a square baking dish. I added a little maple extract which really gives this a french toast vibe, but I know that's not an everyday ingredient that everyone might have laying around. It is still really delicious without it, but if you can grab some, I recommend it! Anyone who knows me knows that I like to make use of every little thing. I hate waste and I absolutely love finding amazing ways to use leftovers. This recipe is definitely a winner!

Ingredients:

8 Leftover biscuits

4 Cups milk (divided)

8 Large eggs

2 Cups sugar

4 Tablespoons melted butter

1 Tablespoon vanilla extract

1 Teaspoon maple extract (optional)

1 Tablespoon cinnamon

1/2 Teaspoon nutmeg

1/2 Teaspoon clove

1/2 Teaspoon allspice

1/2 Teaspoon cardamom

Fruit if desired

Extra cinnamon for sprinkling on top


Directions:

  1. In a large bowl, crumble up your biscuits

  2. Add 2 cups of milk

  3. Mix together and let soak while you prepare the other ingredients

  4. In a separate bowl combine remaining ingredients

  5. Mix well

  6. Pour over biscuit mixture and stir together to combine

  7. Pour contents into a buttered rectangular casserole dish ( standard size)

  8. Top with fruit if desired and sprinkle with a little cinnamon

  9. Bake at 350 degrees for 45 minutes

  10. Enjoy as is or serve with maple syrup and/ or whipped cream
