Maple Pecan Banana Muffins


I have a standard banana muffin recipe that I whip up whenever we have bananas laying around that need to be used, and its great. It is moist and yummy and comes out perfect every time. But every once in a while when I am feeling a little extra, I make this one instead. The addition of pure maple syrup and toasted pecans just turns ordinary into extraordinary! The perfect compliment to a hot cup of coffee or tea, and lovely for entertaining.


Ingredients:

5 Bananas, mashed

1/2 cup melted coconut oil, butter, or mild cooking oil of your choice

2 Eggs

3 Tablespoons maple syrup

1 Teaspoon vanilla extract

1/2 Teaspoon maple syrup

1 3/4 Cups of flour

1 Tablespoon baking powder

1 Cup packed brown sugar

1 Teaspoon cinnamon

1 Teaspoon salt

1/2 Teaspoon nutmeg

Dashes of ground ginger, clove, and allspice (optional)

1/2 Cup of toasted, chopped pecans


Glaze:

1/4 Cup butter

1/2 Cup maple syrup ( 100 percent PURE maple syrup)

1/2 Teaspoon maple extract ( optional)

1 Cup powdered sugar

Pinch of salt


Directions:

  1. Mix bananas, oil, eggs, maple syrup and extracts together well.

  2. Add flour, baking powder, sugar, spices, and salt.

  3. Mix until combined.

  4. Fold in pecans.

  5. Scoop into prepared muffin pan.

  6. Bake at 400 degrees for 15-20 minutes.


For Glaze:

  1. In a small sauce pan set over a medium heat, combine butter and syrup.

  2. Whisk until melted together well.

  3. Remove from heat.

  4. Add in extracts, if using.

  5. Whisk in powdered sugar until smooth.

  6. Remove muffins from pan and glaze as desired.

  7. ENJOY!
