Leprechaun Muffins

I love any excuse to celebrate, so whipping up these yummy green muffins for St. Patrick's Day makes me so happy! What doesn’t make me happy is using artificial ingredients and dyes in recipes. That’s why I’m thrilled that these vibrantly green muffins get their color from spinach!
But don’t worry—these taste just like banana muffins. Your family and friends will never guess they’re packed with extra goodness! Plus, these little leprechaun muffins double as Grinch muffins at Christmas time. They’re also super simple to make!
Ingredients
Wet Ingredients
3 large bananas
5 cups fresh spinach
3/4 cup milk (or milk substitute)
1 tablespoon vanilla extract
1/4 cup oil (I used melted coconut oil)
2 eggs (optional, but I use them)
Dry Ingredients
2 cups flour
3/4 cup sugar (or see honey substitution below)
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 tablespoon cinnamon
1/4 teaspoon nutmeg (optional)
1/4 teaspoon ginger (optional)
1/4 teaspoon clove (optional)
Honey Substitute: If you prefer to use honey instead of sugar, add 1/2 cup honey to the wet ingredients instead.
Directions
Blend the wet ingredients: In a blender, combine the spinach, bananas, milk, oil, vanilla, and eggs (if using). Blend until smooth.
Mix the dry ingredients: In a separate bowl, whisk together the flour, sugar, baking powder, baking soda, salt, cinnamon, nutmeg, ginger, and clove.
Combine: Pour the wet ingredients into the dry ingredients and stir just until combined.
Bake: Scoop the batter into prepared muffin tins and bake at 350°F for 15-18 minutes, or until a toothpick inserted in the center comes out clean.
Cool & enjoy! Let the muffins cool slightly before serving.
