Ground beef is a tough one for me because I really don't care for ground or shredded meats. I can handle it in spaghetti, chili, and hamburgers but after that it gets weird. So, I'm always looking for a recipe that'll shake things up and help make ground beef exciting to eat. This Korean ground beef recipe does just that. You can serve it up over rice, stir fried vegetables, noodles, zoodles, or whatever suits you dietary wants/needs. My children (who share my disgust for ground meats) are also huge fans of this dish. Best of all it is so quick and easy to throw together. Here's how:

Ingredients:

  • 1 pound ground beef

  • 1 small sweet onion, diced

  • 1 tablespoon sesame oil

  • 3-4 garlic cloves, minced

  • 1 teaspoon fresh ginger, minced

  • 1/2 cup brown sugar

  • 1/4 soy sauce or tamari for gluten-free

  • 1 teaspoon sriracha

Directions:

  • Add sesame oil to a skillet over medium heat

  • Add onions, garlic, ginger, and meat to pan

  • Sauté until meat is thoroughly cooked and onions have softened

  • Drain majority of fat, keeping 2-3 tablespoons in with the meat mixture

  • Add brown sugar, soy sauce, and sriracha

  • Mix it together and cook over medium heat, stirring occasionally, until sauce has been absorbed by the meat

  • Meat will have a sticky shine

  • Serve with rice, noodles, veggies, or whatever works best for you

  • Enjoy!
