Homemade Salsa

When summer gives you tomatoes and peppers...... make salsa!! You won't believe how easy it is to make salsa at home and if your family loves it as much as mine does, just wait until they try a homemade batch! The fresh flavors come together to make one of the best things you have ever put in your mouth! Below I'll show you exactly how I make it but don't be afraid to adjust it to make it your own! This recipe will yield a HUGE batch, so if you don't want like a 1/2 gallon of salsa, feel free to cut the recipe in half. But if you are a salsa lover, I recommend making the whole batch. It will keep for a week in the refrigerator but it only lasts a couple days in my house. The kids DEVOUR it and I meal plan around the salsa putting it to good use!

Ingredients:
12 Ripe tomatoes
6-8 Jalapeños or a variety of hot, sweet, and mild peppers ( I use a mixture of hot peppers)
2 Limes, juiced
2 Onions, diced preferably by hand ( this helps the texture of your salsa)
1/4 - 1/2 Freshly chopped cilantro ( depending on how much you like it)
Salt to taste ( I add a couple decent pinches probably around two teaspoons)
Directions:
Wash your peppers and tomatoes well
Lay your tomatoes and peppers out on an oven safe pan ( I love a cast iron for this)
Broil them on high until they are charred which will take different amounts of time depending on the peppers you are using. Check them at 7 minutes. Turn the peppers as needed to char all the sides and check them in 5 minute intervals. The peppers should take 10- 12 minutes and the tomatoes will take a few minutes longer. Refer to the pictures below to see what each will look like when they are done.


Once your veggies are charred, slit the peppers opened and deseed them. I highly recommend wearing gloves when handling your peppers.
Once they are deseeded, add them and your tomatoes (including all the char on them) to a food processor or blender. You may need to do this in batches.
Pulse a few times but be careful not to puree. You want it to be a little chunky.
Add it to a large bowl
Add your remaining ingredients
Mix it all up
Taste and adjust salt and lime as needed
