Making your granola bars at home, from scratch allows you to control the ingredients you are offering your family. They are more delicious, nutritious and more economical! Plus it is extremely quick and easy to do! So gather your ingredients and give it a try!
Ingredients:
4 Cups Oats
1 Cup nuts ( your choice, I usually use pecans)
1 Tablespoon of neutral baking oil ( I use coconut or peanut)
3 Cups off whatever add-ins you would like it can be any combination of chocolate chips/chunks, chopped nuts, dried fruit, or rice cereal
1 Stick butter
1/2 cup brown sugar
1/2 cup honey
1/2 nut butter ( optional)
1 Teaspoon vanilla
Directions:
Toss oats and nuts in oil and spread onto a lined sheet pan
Bake at 350 degrees for 8-10 minutes until toasted, stirring halfway through
Remove from oven and pour oat mixture into a large bowl
Add your other add-in ingredients to the oats, reserving any chocolate pieces for later ( they will melt if you add them in now, if you want them to melt you can add them but if you want them to stay in chunk form, set them aside)
In a sauce pan, over medium heat, combine butter, sugar and honey
Whisk continuously until it all melts together and starts to bubble
Remove from heat
Add nut butter if using, and vanilla
Whisk well until smooth
Pour over oat mixture
Combine the ingredients thoroughly
Add in chocolate pieces if using
Press mixture into a lined 1/4 sheet pan or comparable sized rectangular dish
Press firmly to compact ingredients together tightly
Chill in refrigerator two hours or until firm
Cut into bars
Enjoy!
