Grinch Muffins

Your heart will grow three sizes when you make these grinch muffins for your family and friends! They are so fun, especially to serve while watching the movie! My kids are huge fans of the original but no matter which movie your family loves these treats are the perfect snack to serve to complete the theme! Wait ... I didn’t tell you what makes these special! Sure you can throw green dye into anything and make it green, but anyone who knows me knows I try to avoid unnatural ingredients which includes artificial dyes. These muffins are made naturally green with spinach! Now before you Crinkle up your nose let me say this, YOU CANT TASTE THE SPINACH! These taste like banana muffins and they are delicious! You can sub honey for sugar, make them gluten free by subbing GF flour, they are so adaptable and tons of fun! I show you the step by step in tonight’s story and here’s the recipe :


Ingredients:

2 cups flour

3/4 cups of sugar

2 tsp baking powder

1/2 teaspoon salt

1/2 teaspoon baking soda

1 tablespoon cinnamon

Dash nutmeg

Dash clove

5 cups spinach

3 bananas

3/4 cups milk

1/4 oil

1 tablespoon vanilla


Directions:

In a bowl whisk :

Flour

Sugar

Baking powder

Teaspoon salt

Baking soda

Cinnamon

Dash nutmeg

Dash clove


In a blender blend :

5 cups spinach

3 bananas

3/4 cups milk

1/4 oil

1 tablespoon vanilla


Once blended fold wet ingredients into dry ingredients just until combined. Divide into muffin pan. Makes about 18. Bake at 350 for 18 minutes. Glaze, dust with powdered sugar, or just eat plain! These are delicious, fun and pack some extra nutrients for the kiddos!
