French Toast Muffins

If you love French toast then you need to make these delicious French toast muffins. These come together in less than 45 minutes and you can glaze them, dunk them or just grab them and go! The perfect breakfast if you have a family on the go. Also great for those back to school routines.


Ingredients:

1 Stale average size French baguette or 6 HEAPING cups of bread

8 Eggs

3 Cups of milk

1 Tablespoon vanilla

1 Teaspoon cinnamon

Dash of ground nutmeg

Dash of ground clove

Dash of ground ginger

Pinch of salt

Topping

1/4 Cup brown sugar

1 Tablespoon cinnamon


Directions:

  1. Cut your bread into cubes and set aside

  2. In a mixing bowl combine eggs, milk, vanilla and seasonings.

  3. Mix well

  4. Pour mixture over your bread cubes

  5. Give it a gentle mix to moisten all the bred pieces

  6. Let sit 10 minutes

  7. While you wait, combine remaining brown sugar and cinnamon and set aside

  8. After 10 minutes divide bread mixture into prepared muffin tins ( I use butter to grease mine). This recipe should make 12 muffins depending on your pan size

  9. Top each with the cinnamon sugar mixture

  10. Bake at 350 degrees for 30 minutes or until all liquid is absorbed

  11. Dust with powdered sugar, drizzle with your favorite glaze, or dunk them in syrup!
