This is a handy dough that you can use for literally anything you can imagine. It is a great staple recipe to keep for entertaining or jazzing up leftovers. I especially use this dough for taco night leftovers, turning the meat and cheese from the night before into a delicious empanadas style treat. But I have also done everything from cheesy chicken buffalo stuffed ones, to philly cheesesteak, meatballs, and even sweet dessert ones.

Filling ideas:

Different cheeses or cheese spreads

Meatballs

Shepards pie filling

Mashed potatoes and cheese

Pie fillings

Nutella and fruit

Wrapped around a cheese stick

The possibilities are endless and these are so easy to make. Here's how:

Ingredients:

3 Cups Flour

1 Tablespoon sugar

1 Tablespoon baking powder

8 Tablespoons butter

1 Egg

3/4 Cup chicken broth

Pinch of salt

oil for frying

Directions:

  • In a large bowl combine flour, sugar, baking powder, and salt.

  • Mix it together well to combine.

  • Cut butter into flour until you have a sand-like texture. Crumbly. I do this using a pastry cutter but you can use a fork or even your fingers.

  • In a separate bowl beat the egg and broth together well

  • Once combined add it to your flour mixture and stir together to form a dough

  • Knead dough a little to bring it all together

  • Once your dough has come together, shape it into a disk and place it in the refrigerator for 30 minutes.

  • After 30 minutes, roll out your dough on a floured surface until its 1/4 inch thick.

  • Use a round cutter, whatever size you'd like, to cut out your circles.

  • Add filling to the center of your cut out, careful not to overfill

  • Fold dough over and seal with a fork. Seal well so your filling doesn't come out.

  • You don't have to make this empanada-like shape. you can do whatever cutout you'd like and the only thing that would change is that you you would use two pieces of dough, a top and bottom and then seal accordingly.

  • I have a fryer, but you can use a pot to heat oil to 375 degrees.

  • Fry your dough 2-3 minutes on each side.

  • Enjoy!!
