Crunch Berry Cinnamon Rolls

Soft, fluffy homemade cinnamon rolls meet Saturday morning nostalgia in these Oops! All Berries Cinnamon Rolls. Filled with brown sugar, cinnamon, and crushed berry cereal, then topped with a cream cheese frosting infused with berry cereal paste and finished with a crunchy cereal crumble, these rolls are colorful, whimsical, and impossible not to smile at.

Ingredients
For the Dough
1 cup warm water
1/2 cup heavy cream
4 1/2 teaspoons instant yeast
1 cup plus 2 teaspoons granulated sugar, divided
1/2 cup buttermilk, warmed slightly
2 teaspoons salt
2 large eggs, lightly beaten
1/3 cup peanut oil
1/3 cup melted butter
7-8 cups all-purpose flour
For the Filling
12 tablespoons unsalted butter, softened
2 cups brown sugar
1/2 cup granulated sugar
2 tablespoons ground cinnamon
1 1/2 cups finely crushed Oops! All Berries cereal
4 tablespoons cornstarch
For the Berry Cereal Paste
1 cup Oops! All Berries cereal, blended into a fine powder
Heavy cream as needed (approximately 1/2 to 3/4 cup)
For the Frosting
12 ounces cream cheese, softened
8 tablespoons butter, softened
3 teaspoons vanilla extract
3 tablespoons light corn syrup
5 cups powdered sugar
1/2 to 3/4 cup prepared berry cereal paste
Pinch of salt
For the Crunch Topping
1 cup crushed Oops! All Berries cereal
2 tablespoons melted butter
2 tablespoons granulated sugar
2 tablespoons flour
Instructions
Make the Dough
Warm the water and heavy cream until warm but not hot.
Pour into the bowl of a stand mixer and add the yeast and 2 teaspoons sugar.
Let stand for 5-10 minutes until foamy.
Add the warmed buttermilk, melted butter, remaining sugar, salt, oil, and eggs.
Mix to combine.
Add flour one cup at a time using a dough hook.
Continue mixing until a soft dough forms. It should feel smooth and soft, similar to Play-Doh, and should not stick to your hands.
Knead with the dough hook for 3 minutes.
Cover and let rise in a warm place for 1-2 hours, or until doubled.
Make the Filling
In a bowl, combine brown sugar, granulated sugar, cinnamon, crushed cereal, and cornstarch.
Set aside.
Shape the Rolls
Roll the dough into a large rectangle.
Spread the softened butter evenly over the dough.
Sprinkle the filling mixture evenly over the butter, all the way to the edges.
Roll tightly into a log.
Slice and place into parchment-lined baking pans.
Second Rise
Cover loosely.
Let rise for 1-2 hours, or until doubled and puffy.
Bake
Preheat oven to 350°F.
Bake for 20-22 minutes, or until lightly golden.
Do not overbake.
Allow to cool slightly while preparing the frosting.
Make the Berry Cereal Paste
Blend 1 cup of Oops! All Berries cereal into a fine powder.
Stir in enough heavy cream to create a thick pudding-like paste.
Let stand for 5 minutes to hydrate.
Make the Frosting
Beat together cream cheese and butter until smooth and fluffy.
Add vanilla, corn syrup, and salt.
Beat until combined.
Gradually add powdered sugar.
Mix in 1/2 cup of the berry cereal paste.
Taste and add additional paste if desired for a stronger berry flavor.
Make the Crunch Topping
Combine crushed cereal, melted butter, sugar, and flour.
Spread onto a small baking sheet.
Bake at 325°F for 8-10 minutes.
Cool completely.
Finish the Rolls
Spread the frosting generously over the warm rolls.
Sprinkle with the crunch topping.
Garnish with additional crushed cereal for extra color and texture.
Serve warm and enjoy every nostalgic bite.
Notes
One 19.6-ounce box of Oops! All Berries cereal is enough for the recipe, but having a second box on hand is helpful for extra topping and garnish.
The berry cereal paste creates a stronger cereal flavor than a traditional cereal milk infusion.
