Creamy Butternut Squash Soup

There is nothing better on a chilly day than snuggling up with a warm bowl of soup! This creamy butternut squash soup not only tastes amazing but it will make your home smell amazing while you're cooking it! It's extremely quick and easy to make, so put down those canned soups and make this homemade one instead! You won't be sorry!


Ingredients:

2-3 butternut squash, peeled seeded, and cubed

1 Large onion peeled and roughly chopped

1 bulb of garlic, peeled, 6-10 cloves

1 thumb size piece of fresh ginger peeled and chopped (optional, but delicious)

4 cups of good quality chicken broth

3/4 cup of cream or coconut milk

1 teaspoon dried thyme

1-2 teaspoon garlic powder

2 tablespoons sugar or honey ( optional)

A couple drizzles of olive oil

Salt and peper to test


Directions:

  1. Add butternut squash, onions, garlic and ginger to a parchment lined baking sheet

  2. Drizzle with olive oil until veggies are coated

  3. Sprinkle with thyme, 1 teaspoon garlic powder, salt and pepper to taste

  4. Toss to coat

  5. Bake at 350 degree for 45 minutes or until squash is tender

  6. Transfer veggies to a blender

  7. Blend until smooth and creamy

  8. Transfer mixture to a pot

  9. Add chicken broth, 1 teaspoon garlic powder, salt and pepper to taste, and sugar or honey if using

  10. Bring soup to a simmer over medium heat

  11. Add cream or coconut milk

  12. Mix well and enjoy!
