Chicken Stroganoff

I am sure most of you have heard of beef stroganoff. Well this is my chicken version of that dish. You can serve it with rice, noodles or toss it with veggies, It is creamy, delicious and can be ready in about 30 minutes! A great weeknight dinner.


Ingredients:

2 Large Chicken Breasts sliced into bite sized pieces

1 large onion, chopped ( I use Vidalia but any will do)

5-6 Cloves of garlic, minced

1 Tablespoon plus 1 teaspoon garlic powder, separated

1 Tablespoon plus 1 teaspoon onion powder, separated

1 Teaspoon plus 1/2 teaspoon paprika, separated

Salt and pepper to taste

8-16 Ounces of mushrooms, sliced

4 Tablespoons butter

1/4 Cup flour

2 Cups of Chicken broth

1/4 Cup soy sauce

1 Cup cream

1 Cup Sour cream

Oil for sautéing ( I use peanut)


Directions:

  1. Heat a lightly oiled pan over a medium heat

  2. Season chicken with 1 tablespoon, garlic powder, 1 tablespoon onion powder, 1 teaspoon paprika and salt and pepper

  3. Add chicken to the pan and sauté until most of the pink is gone

  4. Add onions, garlic and mushrooms

  5. Sauté for about 5 minutes or until veggies have softened, stirring occasionally

  6. Add butter and allow to melt

  7. Add flour and mix until fully incorporated

  8. Add broth, soy sauce, cream and remaining seasonings, except for salt. The soy sauce provides plenty of sodium and you can taste it at the end to adjust as needed.

  9. Let simmer over a medium-low heat for about 10-15 minutes, stirring occasionally.

  10. Fold in sour cream until disolved and smooth.

  11. Taste and add salt or pepper as needed

  12. Serve over rice, noodles, quinoa or veggies.

  13. Enjoy!
