Chewy Maple Cookies


I am so excited about these cookies! This may be surprising, but I actually don't eat the baked goods that I make. The rest of the family does, but I typically don't unless I need to taste it for recipe creating. Not that I am against treats. If you know me, you know I LOVE treats. For some reason if I make them I end up not wanting any. It's just a weird thing. However, these cookies were definitely the exception. I had an embarrassing amount and if I didn't force myself to stop I honestly could have eaten the whole tray. They have become my most favorite thing. I recommend sticking exactly to the recipe because I can't imagine doing a single thing differently. I passionately love these cookies. I hope you do too!


Ingredients:

1/2 Cup butter, room temperature

1/2 Cup solid style coconut oil

1 1/2 Cups sugar

1/4 Cup brown sugar

1/4 Cup 100% pure maple syrup

3 Egg Yolks

1 3/4 cups all purpose flour

1 Teaspoon baking powder

1 Teaspoon cream of tartar

1/2 Teaspoon salt

1/2 Teaspoon pure maple extract

1/2 Teaspoon vanilla extract



Icing

1/4 Cup whole milk

1/4 Cup melted butter

3 Tablespoons 100% pure maple syrup

1/4 Teaspoon pure maple extract

1/4 Teaspoon vanilla extract

2 1/2 Cups powdered sugar



Directions:

  1. Preheat oven to 300 degrees Fahrenheit

  2. Mix the butter, coconut oil and sugars until combined and creamy.

  3. Add maple syrup and extracts, mix well.

  4. Add egg yolks and mix until well incorporated.

  5. Add remaining dry ingredients, and mix until fully combined.

  6. Scoop by even spoonfuls onto a parchment lined cookie sheet and bake for 13 minutes

  7. Make icing ( directions below)

  8. Remove from oven and allow cookies to remain on cookie sheet for an additional 10 minutes.

  9. Add a spoonful of icing to each cookie and gently spread it around with the back of the spoon.

  10. After a few minutes the icing will set and cookies will be stackable.

  11. Makes at least 3 dozen depending on the size you make.


For icing

  1. Combine milk, butter, syrup and extracts, mix well

  2. Add powdered sugar and whip until fully incorporated
