Banana Pudding From Scratch

Banana pudding. A timeless southern dessert. If you’re from the south you’ve definitely tasted it before, but I promise you’ve never had it this! Ditch the pudding packets and cool whip

( my mortal enemy) and try making this from scratch. I promise it’s worth the little bit of extra time and effort.


Ingredients:

1/2 cup sugar

3 tablespoons cornstarch

2 cups milk

2 egg yolks

1/4 teaspoon salt

3 tablespoons butter

3 teaspoons vanilla extract

1 cup heavy whipping cream

1/4 cup powdered sugar

8 ounces cream cheese

14 ounces sweetened condensed milk

1 box of Nilla wafers


Directions:

In a sauce pan combine:

1/2 cup sugar

3 tablespoons cornstarch

Add 1/2 cup milk

Whisk well until dry ingredients are dissolved

Add :

2 egg yolks and

1 1/2 cups milk

1/4 teaspoon salt

Mix well

Cook over a medium heat until mixture begins to bubble, whisking continuously.

Turn temperature down to medium low and simmer 5 minutes until thickened, while whisking regularly.

Remove from heat and add 3 tablespoons of butter and 2 teaspoons vanilla extract. Mix well until fully incorporated. You’ve made vanilla pudding. Refrigerate to cool.

Meanwhile in a mixer whip 1 cup of heavy whipping cream, 1/4 cup of powdered sugar and 1 teaspoon vanilla. Whip until stiff peaks form.

Refrigerate while preparing the next step.

In a mixer combine 8 ounces of softened cream cheese and 14 ounces of sweetened condensed milk.

Mix until completely smooth.

Pour into a bowl and gently fold in whipped cream.

Gently fold in cooled pudding mixture.

You now have the creamy base for your banana pudding.

Layer with nilla wafers or your cookie of choice and banana slices, in either individual serving cups or as a large trifle.

Refrigerate until ready to serve.



Ditch the pudding boxes and cool whip and give this homemade banana pudding a try! You won’t be sorry!
