Banana Cobbler

I am sure when you think of cobbler, peach, apple or blueberry might come to mind. But have you ever tried banana cobbler? If not, I definitely recommend giving it a go! It's warm, sweet, and perfect for a family gathering whether part of a breakfast table or for dessert. Give this quick and easy recipe a try! You'll need self rising flour for this recipe but if you don't have any don't fret, you don't have to make a special trip to the store. I include how to throw together your own in the instructions below.


Ingredients:

1 1/2 Cups Self Rising Flour, divided (see notes to make your own)

3/4 Cup packed brown sugar

16 Tablespoons room temperature butter, divided

1 Cup whole oats

1/2 Cup chopped pecans ( or if omitting nuts use an extra 1/2 cup of oats)

1 Cup white sugar

1 Cup milk

1 Tablespoon cinnamon

1/2 Teaspoon Nutmeg

1/4 Teaspoon ground ginger

1 Teaspoon Vanilla extract

4-6 Ripe bananas, sliced


Directions:


For crumble topping:

Combine oats, 1/2 cup flour, 8 tablespoons butter, brown sugar and pecans if using. Mush together until all ingredients are incorporated together. Set aside


For filling:

Combine remaining flour, sugar and milk. whisk well.

Add seasonings, whisk until combined.

Melt remaining 8 tablespoons of butter and add to mixture.

Whisk until butter is fully incorporated


Putting it together:

Pour filling into a buttered standard size casserole dish

Cover filling with sliced bananas

Sprinkle crumble topping on evenly

Bake at 375 for 35-40 minutes

Notes:

To make your own self rising flour, simply add 1 1/2 teaspoons of baking powder and a 1/4 teaspoon of salt per every one cup of flour.
