Banana Berry Muffins

As summer graces us with its warm embrace, the season of berries is upon us. Vibrant, juicy, and bursting with flavor, berries are the quintessential summer treat. Whether you're picking them fresh from the farm or grabbing a pint from your local market, there's no better time to indulge in these delicious fruits.

One delightful way to make the most of your berry bounty is by baking a batch of Banana Berry Muffins. These muffins are a perfect blend of ripe bananas and your favorite summer berries, creating a moist, sweet, and slightly tangy treat that's ideal for breakfast, a snack, or even dessert. In this recipe, I've used blueberries, but feel free to substitute with your preferred berry—be it strawberries, raspberries, or blackberries. Each variety brings its own unique burst of flavor to these already delectable muffins.

So, grab your berries and let's get baking! These Banana Berry Muffins are a simple yet scrumptious way to celebrate the tastes of summer.


Makes 12 muffins


Ingredients:

  • 3 ripe bananans, mashed

  • 1/2 cup plain yogurt ( or sour cream)

  • 1/2 cup sugar

  • 1/3 cup milk

  • 1 egg

  • 1 tablespoon vanilla

  • 2 cups flour

  • 1 teaspoon baking soda

  • 1 teaspoon baking powder

  • Pinch of salt

  • Dash of ground cardamom ( optional)

  • Dash of cinnamon ( optional)

  • Dash of nutmeg ( optional)

  • 1 1/2 cup of berries ( chop larger berries)

  • Extra berries for topping the muffins, if desried



Directions:


  1. Preheat oven to 425 degrees

  2. Combine bananas, yogurt, sugar, milk, egg and vanilla.

  3. Mix well

  4. Add dry ingredients

  5. Mix until combined

  6. Fold in berries

  7. Scoop into prepared muffin cups, filling to the top

  8. Top with extra berries as desired

  9. Bake at 425 for 5 minutes

  10. Lower the temperature to 350 degrees

  11. Bake another 10-15 minutes until fully baked
