Baked Banana Bread Oatmeal

Oatmeal is a staple breakfast menu item at my house, and has been since the children were little. Typically I make it stove top, but occasionally I do a baked version and it is so yummy! Feel free to customize this by adding in berries, chocolate chips, or nuts. This can also be made without the banana to create a flavor you'd prefer. Just omit the banana and proceed with the recipe as it's written. You can even substitute 1 cup of pumpkin puree in place of the banana. This is a forgiving recipe, and I promise you can play around with it and it'll work out as long as you keep the base ingredients the same. Give it a try!



Ingredients:

3-5 Mashed bananas

4 Eggs

5 Cups milk

1/2 Cup Sugar

1/2 Cup brown sugar

1/2 Cup melted butter or coconut oil

4 Teaspoons vanilla

6 Cups whole oats

3 Teaspoons baking powder

2 Tablespoons cinnamon plus more for sprinkling on top

1 Teaspoon salt

Dashes of :

Nutmeg

Clove

Ground ginger


Directions:

  1. Combine banana, eggs, milk, sugars, butter and vanilla and seasonings

  2. Mix well

  3. Add oats, baking powder, salt and any desired mix-ins like nuts and berries

  4. Mix well

  5. Let sit 10 minutes

  6. Pour into a buttered casserole dish

  7. Sprinkle with cinnamon

  8. Bake at 350 degrees for about 50 minutes ( until solid and not jiggly)

  9. Enjoy!
