Avocado Pie

You will have to trust me on this one. As the weather gets warmer and you trade the heavy soups and stews of winter for lighter fare, you need this avocado pie in your life. Sound strange? I know, and I feel ya. Believe me I'm the number one enemy of foods pretending to be things that they aren't. I don't want cauliflower pretending to be chicken wings, or pizza crust for that matter. But I promise that's not what this is. This is avocado being an avocado in the very best possible way, and if you like key lime pie, you'll love this. Sure avocados make great guacamole and are delectable on toast, however avocados go both ways, savory and sweet. This pie is a perfect light and creamy dessert on a warm day, and an excellent compliment to Cinco De Mayo festivities! It's also super quick and easy. Ingredients:
crust
2 1/2 cups graham cracker crumbs
5 tablespoons sugar
pinch of salt
10 tablespoons butter
Filling:
3 ripe avocados
8 ounces cream cheese
1/2 cup sugar
14 ounces sweetened condensed milk
1/2-3/4 cup of lime juice ( I did 3/4 cup)
pinch of salt
Directions:
For the crust combine graham cracker crumbs with sugar and salt. Mix well and add melted butter. Mix together well with a fork until all your dry ingredients are moistened. Transfer crumb mixture to a pie plate and press into bottom and sides. Bake at 350 for 8 minutes.
To make the filling combine all filling ingredients into a mixing bowl. Mix until well blended. Pour into cooled pie crust, cover and refrigerate for 4-6 hours until firm. That is literally it! How easy, breezy beautiful is that!? Less than 20 minutes of prep and you have a really unique dessert that is so incredibly yummy!
